Phoenix's culinary landscape continues to flourish with the arrival of Humble Oysters & Bubbles, a seafood parlor and bubbles bar from the creators of Humble Bistro. Located on High Street in North Phoenix, this establishment offers a refined yet welcoming dining experience, featuring a diverse selection of fresh, sustainable seafood and sparkling wines from around the globe.​
Adjacent to Humble Bistro's High Street location, Humble Oysters & Bubbles exudes East Coast charm with its white shiplap walls, classic subway tiles, and black-and-white beach-inspired photography. Guests can choose to dine at the concrete bar top, observing the preparation of their meals, or opt for a more intimate setting in the perimeter booths. The ambiance transitions from bright and airy during the day to a candle-lit, romantic atmosphere in the evening, complemented by the lively sounds of popping Champagne bottles and global music.​

The menu at Humble Oysters & Bubbles showcases an impressive array of oysters, mussels, clams, crab, lobster, shrimp, scallops, octopus, and fresh fish, prepared in various styles such as pasta, curries, and sandwiches. Each dish is crafted from scratch, emphasizing bold flavors that offer a unique twist on classic seafood dishes.​
Notable appetizers include the warm shrimp cocktail, topped with lemon zest and chives for a bright, citrusy note, and the decadent shrimp sliders, served on buttery house-made sweet buns with zesty chili mayo. For a lighter option, the tuna carpaccio features hand-pounded ahi tuna, crispy capers, microgreens, and a shallot vinaigrette, accompanied by crisp bread.​
From the steam kettles, the bouillabaisse stands out, featuring mussels, clams, salmon, gulf prawns, octopus, and squid in a creamy saffron-tomato broth, enriched with lemon zest, chili flakes, and fresh parsley. Toasted bread accompanies the dish, perfect for soaking up the flavorful broth, with the option to add angel hair pasta for a heartier meal. Another highlight is the lobster-and-shrimp roll, featuring butter-poached East Coast lobster tail, Argentine shrimp, and gulf prawns tossed in velvety hollandaise sauce, served inside a fluffy, house-made croissant and topped with lemon zest.​
The oyster selection rotates regularly, featuring boutique farms and exclusive, chef-curated variations. Each oyster "bite" is served deshelled with unique flavors such as rosé, Michelada, cucumber, and dumpling, allowing guests to explore a range of tastes.​
